Lemony Baked Salmon With Asparagus & Bulgur

This is recipe number five that I’ve published here on Story Style Vision from the  Real Simple Easy, Delicious Home Cooking cookbook.  For those of you who haven’t read my first post in this series, I am attempting to become a more adventurous cook by making recipes that I would have never tried cooking before.  I’m using the Real Simple cookbook because it’s, well, real simple.  I chose today’s recipe because there was an ingredient in it that I have never tasted, let alone cooked myself- and that ingredient is bulgur wheat.

When I was at the grocery store recently, I had a difficult time finding the bulgur wheat.  I asked two different store associates and both of them looked at me like I had two heads when I asked where could I find bulgur.  After a search through the natural foods isle, I was finally able to locate it with all the Bob’s Red Mill products.  The rest of the ingredients were a breeze to locate.  Here is what you’ll need: 1 cup of bulgur, 1 can of vegetable or chicken broth, 1 pound of asparagus, about 1 pound of salmon, 1 lemon,  2 tablespoons of chopped fresh dill, salt and pepper.

This recipe is so easy.  You literally just throw it all in one pan.  Preheat the over to 375 degrees.  Add the bulgur to a shallow baking dish, and pour the can of vegetable or chicken broth over the bulgur.  Next, arrange the asparagus over the bulgur in one layer if you can.  Add a dash of salt and pepper.

Next, lay the salmon over the asparagus.  Cut a few slices of lemon and squeeze the juice over the top of the salmon.  Then lay the slices over the salmon.  Add a dash of salt and pepper to the salmon.

Cover the pan securely with aluminum foil and bake for about 30 minutes.  The bulgur will absorb the broth as it is baking and give it such a rich flavor.  I completely forgot to do this next step, but you’re supposed to serve the dish with dill. Oops.

There you have a delicious, nutritious and incredibly easy meal.  Mmm!
